Cafecauca began on December 12, 1961 in Popayán, Colombia, and over decades has grown from a few hundred members into an organization supporting thousands of smallholders across Cauca’s mid-to-high elevations. The cooperative weathered financial crises, conflict, and climate threats by focusing on innovation, infrastructure, and farmer training.
Its organic, washed-process coffees are produced with selective hand-picking, depulping, controlled fermentation (18–36 hours), and careful drying to 10–11% moisture. Colombia’s “Excelso EP” grading and extra post-harvest sorting yield cleaner, more consistent lots; shade-grown systems, organic practices, and traceability efforts support quality, environmental stewardship, and community resilience.
